I love how they ghost ride their bikes! This might be the funniest thing I’ve seen in years.
Here’s the burrito recipe I promised. It’s mighty tasty and much healthier than Chipotle or Taco Bell, mostly because of better ingredients and a much much lower salt content. The rice is optional (I didn’t make it this last time, in fact)
(Optional: This is enough for one person.)
Cut the potatoes into largish chunks by cutting in half length-wise, then cut each half into length-wise thirds. Slice the thirds every half to 3/4 inches. Add the potatoes to a 10-12″ cast iron skillet at medium-low heat, and sprinkle a pinch of kosher salt over them. When the potatoes are about half done, add the ground meat and brown. Drain meat and potatoes in a colander (do not douse with water) and let sit. Increase heat to medium and add the frozen vegetables. When the onions are just translucent, add the meat and potato mix back to the skillet. Add the spices to taste. Approx. 1/2 tblsp kosher salt, 1 tblsp black pepper, 1/2 tblsp cilantro and garlic powder, 1/4 tblsp red pepper flakes and cayenne pepper (more of these if you like it hot!), 4 tblsp chili powder, 2 tblsp cumin. Add 1/2 the water and stir slowly. Add small amounts of water occasionally to deglaze the pan. When the potatoes are done and the last of the water is boiled off, remove from heat and serve with your favorite toppings in burrito size tortillas that have been moistened with water and microwaved on high for 15 to 20 seconds. (This makes them easy to roll and fold without breaking)
Rice: Make rice according to instructions on box. Add lime juice and cilantro. Stir.
After drinking too much on Saturday night and wasting Sunday by not feeling like doing anything except lay around the apartment, I figured I was in for some serious weight gain. So Monday I went out after work and put in 30 miles. Wow, my legs felt like dead trees. I probably shouldn’t take so many days off if I can help it if not for my weight loss, but for the fact that having dead legs when I do ride again is not fun. I also thought that the allergies I had as a child had gone away. After Monday’s ride, I wanted to scratch out my eyes with a grapefruit spoon they hurt so badly. I guess I’ll always be allergic to pollens.
Anyway, after my crazy, lazy weekend and a large dinner last night (Beef, potato, and peppers burritos of my own design. An approximate recipe will be in another post.), I was curious as to how much I’ve packed back on. So, I weighed myself this morning and to my surprise, I’ve lost two more pounds! This puts my weight loss at around one pound per week, which is a very healthy rate according to everything I’ve read. It’s also unbearably slow. At this rate, I will reach my target weight in about a year and a half. UGH. Being fat sucks.
Tomorrow is the Flying Pig Marathon here in Cincinnati. I’m not running it, because I’m not prepared at all. Maybe next year…. OK, crap. Now that I got myself thinking about it, I might run it next year, or the half marathon at least.
Anyway, the newspaper’s website today had a pretty funny picture on the main page for an article about the marathon.:

Also, it’s threatening to storm all afternoon and I want to go ride my bike. Grrr… Maybe I’ll ride a quick 20 miler at least. It’s supposed to be nice out tomorrow. I’m thinking about doing a metric century (100 km/62 miles).

All this talk about how I’m fat and what not, but no before pictures!? Well that’s about to change ![]()
So, as I’ve mentioned in the About Page (you should read it if you haven’t), I was fat, then skinny, then fat again. Here is a picture of me during my “I can’t afford food” skinny period. I think this photo was taken back in 2003. I was around 180 lbs then.

A few years of working a desk job and no exercise changed all that. This is me sometime in the summer of 2006. I was somewhere around 260 lbs when this photo was taken.

So there are some reference photos for you to see what I’m up against. I know there are some more of me from last summer floating around somewhere. I’ll try to find those and put them up here, but these two should give you a pretty good idea of what I look like anyway.
I lucked out this morning! When I went to get my morning coffee, the pot was empty. “Typical”, I thought. “some jerk drank the last of the coffee and didn’t make more.” Then I realized that because I would be making the next pot, it wouldn’t be super bitter toxic sludge. I did not need any sugar in my coffee today!
In other news, it is raining today after being forecast everyday since Tuesday. I’ve not been riding after work because of the supposed rain that we never got. Today, however, it is and is supposed to continue through Saturday. This really put a damper on my plan to ride 200 miles this week. I’ve got 77 in between Sunday and Monday. Maybe I’ll have to break out the indoor bike trainer. UGH. What do you do when a rainy week cuts your outdoor exercise short?

Damnit. I was doing the leftover dishes that didn’t make it into the dishwasher, or wouldn’t fit and gave in to my hunger. I ate 6 hot dogs with no buns or anything because I’m lazy. I guess you could consider that my dinner, but man what a crappy dinner it was. I actually feel guilty about downing those dogs.
At 130 calories a pop, I ate 780 calories for dinner. On the bright side, I am now out of hotdogs, so I won’t be tempted to scarf them down again anytime soon.

I ate a grand total of 1175 calories today. I guess that isn’t so bad, other than the amount of sodium I probably got from the hot dogs.
